Fig and Crispy Prosciutto Grilled Cheese Sandwiches

Ingredients

  • 8 very thin slices prosciutto (about 1/8 pound total)
  • 8 slices (1/2-inch-thick) rustic Italian, sourdough or light rye bread
  • 3 tablespoons butter, softened
  • 1/2 cup fig jam
  • 6 ounces Gruyere or Comte cheese, thinly sliced or shredded
  • 4 ounces cheddar cheese, thinly sliced or shredded

Beloved charcuterie flavors meld together this this ooey, gooey grilled cheese sandwich.

Instructions

  1. On griddle or in large nonstick skillet cook prosciutto slices, a few at a time, for 1 to 2 minutes or until crisp, turning once. Set aside.
  2. Place bread slices on cutting board. Lightly spread softened butter over one side of bread slices. Turn slices over. Spread fig jam on plain sides of each bread slice.
  3. Place Gruyere or Comte cheese on four of the bread slices. Top with crisp prosciutto slices and then cheddar cheese. Place remaining bread slices on top, jam side down.
  4. On same griddle or in large nonstick skillet cook sandwiches, covered, over medium-low heat for 10 to 18 minutes or until golden brown and cheese melts, turning once. Diagonally slice sandwiches in half before serving.
