Roasted Garlic Mashed Potatoes

Ingredients
- 2 heads garlic
- 3 teaspoons olive oil
- 3 pounds Yukon gold or russet potatoes, peeled and cut into 1” chunks
- 8 tablespoons salted butter, cut into 4-6 pieces, plus more for serving
- 3/4 cup whole milk
- 1.5 teaspoons salt, plus more to taste
- Freshly ground black pepper and parsley for garnish, if desired

These spuds are more than just a side dish; they’re a delightful blend of rich, buttery mashed potatoes infused with the warm essence of roasted garlic. Creaminess is the hero here, thanks to the silky touch of milk or half-and-half and the tangy depth of sour cream. To top it all off, it’s topped with a sprinkle of fresh parsley and a pad of (melting) butter.
Instructions
- Preheat oven or toaster oven to 400°F. Slice about ½-inch off the top of the heads of the garlic head so you can see the tops of all of the cloves. On a piece of aluminum foil, drizzle the garlic head with olive oil. Wrap them up with the foil, and roast until the cloves are golden brown and very soft, about 40 minutes. Allow the garlic to cool, then squeeze out the cloves and set aside.
- While the garlic roasts, steam your potatoes. Place a steamer basket or colander into a large pot or Dutch oven and add about 1 inch of water to the pot. Transfer the potatoes to the basket or colander and cover the pot with a snugly fitting lid.
- Bring the water to a boil over high heat. Once boiling, reduce the heat to a simmer and steam the potatoes until they are soft and can easily be pierced with a fork, about 20-25 minutes. Carefully remove the steamer basket and drain the remaining water from the pot.
- Immediately return the potatoes to the pot along with the butter, garlic cloves from 1 head of garlic, and salt. Mash the potatoes and garlic using a potato masher or hand mixer. Add ½ cup of milk and blend until incorporated. Add remaining ¼ cup milk for creamier potatoes or until they reach the desired consistency. Season to taste with additional salt, roasted garlic, and pepper to taste.
- Garnish with any remaining roasted garlic cloves, additional butter, fresh parsley, and black pepper, before serving, if desired.
