Whole Wheat Pumpkin Waffles

Ingredients

  • 1 cup pure pumpkin puree 
  • 1 cup plain low-fat yogurt 2% 
  • ½ cup low-fat milk 2% 
  • 2 large eggs 
  • 2 tablespoons coconut oil, melted 
  • 2 tablespoons pure maple syrup 
  • 1 teaspoon vanilla 
  • 1 cup whole wheat pastry flour 
  • ½ cup ground flax seed 
  • 1 tablespoon baking powder 
  • 1 tablespoon cinnamon 
  • 1 teaspoon ground nutmeg 
  • ½ teaspoon ground cloves 
  • ½ teaspoon salt 
  • Chopped walnuts and additional maple syrup (optional) 

Instructions

  1. Heat the waffle maker while you begin making the batter. 
  2. In a medium bowl, whisk together all the liquid ingredients: pumpkin, yogurt, milk, eggs, coconut oil, maple syrup, and vanilla. 
  3. In a large bowl, whisk together the dry ingredients: flour, flax seed, baking powder, cinnamon, nutmeg, cloves, and salt. 
  4. Slowly add the liquid mixture to the dry ingredients, stirring until just combined. Be careful not to overmix. 
  5. Spray the waffle maker with cooking spray. Pour in about ½ cup of batter at a time. Cook until lightly golden brown, or according to the manufacturer’s instructions. 
  6. Serve warm with chopped walnuts and extra maple syrup, if desired
