Whole Wheat Pumpkin Waffles

Ingredients
- 1 cup pure pumpkin puree
- 1 cup plain low-fat yogurt 2%
- ½ cup low-fat milk 2%
- 2 large eggs
- 2 tablespoons coconut oil, melted
- 2 tablespoons pure maple syrup
- 1 teaspoon vanilla
- 1 cup whole wheat pastry flour
- ½ cup ground flax seed
- 1 tablespoon baking powder
- 1 tablespoon cinnamon
- 1 teaspoon ground nutmeg
- ½ teaspoon ground cloves
- ½ teaspoon salt
- Chopped walnuts and additional maple syrup (optional)
Instructions
- Heat the waffle maker while you begin making the batter.
- In a medium bowl, whisk together all the liquid ingredients: pumpkin, yogurt, milk, eggs, coconut oil, maple syrup, and vanilla.
- In a large bowl, whisk together the dry ingredients: flour, flax seed, baking powder, cinnamon, nutmeg, cloves, and salt.
- Slowly add the liquid mixture to the dry ingredients, stirring until just combined. Be careful not to overmix.
- Spray the waffle maker with cooking spray. Pour in about ½ cup of batter at a time. Cook until lightly golden brown, or according to the manufacturer’s instructions.
- Serve warm with chopped walnuts and extra maple syrup, if desired
