Apple and Brie Flatbread

Ingredients

Dough

  • 12 ounces Brie cheese
  • 2 1/4 cups all-purpose flour, (282 g)
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup whole milk
  • 1/2 cup plain, full-fat Greek yogurt

Toppings

  • 3 tablespoons salted butter, melted
  • 1 tablespoon honey, plus extra for drizzling
  • 1/2 teaspoon ground cinnamon
  • 2 small red apples (such as Macintosh, Honeycrisp or Pink Lady), thinly sliced
  • Flaky sea salt, to taste
  • Freshly ground black pepper, to taste
  • 1-2 sprigs Fresh thyme and/or oregano

This soft, tangy flatbread dough, made with Greek yogurt and milk, is topped with creamy Brie, and thinly sliced apples bathed in sweet honey cinnamon butter. Finished with flaky sea salt, black pepper, and fresh herbs, serve this delicious flatbread as an appetizer or enjoy it as a meal.

Instructions

  1. Place the Brie in the freezer to chill for 20-30 minutes, which will make it easier to slice thinly.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, and salt. In another bowl, whisk together the milk and yogurt. Add half of the milk mixture to the dry ingredients and stir until the dough starts to come together. Gradually add the remaining milk mixture, stirring until all the flour is incorporated and you have a rough dough.
  3. Generously flour your countertop and hands. Turn the dough onto the floured surface and sprinkle more flour on top. Knead the dough for about 8 minutes, sprinkling additional flour as needed if the dough starts sticking. To knead, fold the dough in half and push it forward with the heels of your hands. Rotate it 90 degrees and repeat. The dough should be smooth and hold its shape after kneading. Alternatively, you can knead the dough in a stand mixer with a dough hook. Cover and let the dough rest for 10-15 minutes.
  4. Preheat the oven to 425°F (220°C) and line two baking sheets with parchment paper.
  5. In a shallow bowl or baking dish, combine the melted butter, honey, and cinnamon. Add the sliced apples and toss to coat them evenly.
  6. Remove the Brie from the freezer. Using a sharp knife, remove the rind and slice the Brie into thin strips.
  7. Generously flour your countertop again. Divide the dough in half. Using a rolling pin, roll each piece of dough out to about ⅛ inch thickness.
  8. Carefully transfer the rolled dough to the prepared baking sheets, using a dough scraper or thin spatula to loosen it from the counter if necessary. Evenly layer the apples and Brie over the dough, and drizzle any remaining cinnamon honey butter over the apples.
  9. Bake for 10-12 minutes, or until the edges of the flatbread are golden brown, apple slices tender, and the Brie is bubbly.
  10. Remove from the oven and top with flaky sea salt, freshly ground black pepper, fresh thyme, and/or oregano, and a drizzle of honey, if desired. Slice and serve immediately.
