Cheesy Stuffed Mushrooms

Ingredients

  • 1 medium onion, finely chopped
  • 1 green pepper, finely chopped
  • 1 tablespoon olive oil
  • 1/2 cup light sour cream
  • 4 ounces Neufchatel cheese, softened
  • 1 teaspoon minced garlic
  • 2 tablespoons fresh parsley
  • salt and pepper
  • 1/2 cup 2% sharp cheddar cheese, divided
  • 16 white mushrooms (2 inch diameter), stems removed

These Cheesy Stuffed Mushrooms are the perfect bite-sized appetizer—rich, creamy, and packed with flavor. A savory blend of sautéed veggies, Neufchatel, and sharp cheddar fills tender mushroom caps for a simple yet satisfying dish that’s ready in just over 30 minutes.

Instructions

  1. Preheat oven to 400°F. In a large skillet heat olive oil over medium high heat.
  2. Add onion and green pepper and cook until vegetables are tender (about 5-10 minutes). Remove vegetables from heat and cool slightly.
  3. In a bowl combine cooked vegetables, sour cream, Neufchatel cheese, garlic, parsley, salt, pepper and 1/4 cup of the sharp Cheddar cheese.
  4. Stuff each mushroom with cheese filling and sprinkle remaining 1/4 cup of sharp Cheddar cheese over top of each mushroom. Cook for 15 minutes or until cheese is melted. Serve immediately.
